Mutton Kabab Recipe - Succulent mutton Kabab.

Ingredients:
- 500 gms boneless mutton cubes
- cup beaten yogurt
- 1/4 cup lemon juice
- 2 tsp. Khus (poppy seeds) Khus
- 2 tsp. Nigella/onion seeds
- 2 tsp. Dhania
- 1 tsp. Jeera
- 8 Pepper
- 4 Cloves
- Salt to taste
For paste:
- 1 cup coriander leaves
- 1 cup mint leaves
- 3 green chilies
- a small ginger piece
- 6-7 garlic flakes
- 120g raw papaya
Serve with
- Serve hot with onion rings.
Method:
- Apply the paste to the mutton cubes.
- Lightly roast and powder the khus-khus (poppy seeds), chironji, Coriander powder, cumin seeds, pepper and cloves.
- Sprinkle the powder over the mutton, mix well and add salt to taste.
- Allow the mutton to marinate for 6-8 hours.
- Then thread each mutton piece on the skewers, baste with oil and roast over charcoal.
